CIABATTA
BACIO & ROASTED CAPSICUM
This ciabatta sandwich draws inspiration from the classic Italian tradition of combining fresh, high-quality cheeses with simple, vibrant vegetables. Bacio cheese, a soft, creamy Italian variety, is pan-fried to bring out its delicate flavour and golden texture, while roasted capsicum adds sweetness and spinach contributes freshness. Easy to assemble and packed with flavour, this sandwich is perfect for casual lunches, light dinners, or a gourmet snack at gatherings — celebrating the simplicity and richness of authentic Italian ingredients.
INGREDIENTS :
1 ciabatta loaf, halved
200g fresh Bacio cheese, sliced
Roasted capsicum, drained and sliced
1 cup fresh spinach leaves
Olive oil for frying
Salt & pepper
Optional: balsamic glaze or pesto for drizzling
[ serves 2-4 people ]
STEPS :
Heat a little olive oil in a non-stick pan over medium heat
Add Bacio slices and cook 1–2 minutes per side until golden and slightly melted
Remove and set aside
Slice ciabatta in half horizontally
Layer fresh spinach, jarred roasted capsicum, and pan-fried Bacio on the bottom half
Season with salt & pepper and drizzle with balsamic glaze or pesto if desired.
Top with the other half of ciabatta
Slice into portions and serve immediately while Bacio is warm and gooey
