mozzarella 'mozza bella' balls

Arancini are classic Sicilian rice balls with a rich history dating back to the 10th century, originally created as a portable snack for workers and travellers. Traditionally stuffed with meat, vegetables, or cheese, they combine creamy rice with a savoury filling, then are coated and fried to golden perfection. Perfect as an appetizer, party finger food, or a comforting main, arancini bring a taste of Italy to family dinners, festive gatherings, or casual get-togethers.

INGREDIENTS :

3 cups cooked risotto or plain arborio rice (cooled)
½ cup grated Parmesan
2 eggs (one for rice, one for coating)
250g beef mince
1 carrot, finely diced
½ cup peas (frozen is fine)
2 tbsp tomato paste
1 onion, chopped
1 cup breadcrumbs
½ cup plain flour
Oil for frying
