Rustic Caprese, Bocconcini

Caprese salad hails from the island of Capri, Italy, where fresh, simple ingredients highlight the flavours of the region, much like the classic Caponata of Sicily. This rustic version combines sweet cherry tomatoes with creamy cherry bocconcini, crisp cucumber, and briny olives, finished with fresh herbs and a drizzle of olive oil. Perfect as a light lunch, starter, or vibrant side for any gathering.

INGREDIENTS :

200g cherry bocconcini, halved if large
1–2 cups cherry tomatoes, halved
1 medium cucumber, sliced or chopped
½ cup mixed olives (black, green, or kalamata), pitted
2–3 tbsp extra virgin olive oil
1–2 tsp balsamic glaze or vinegar (optional)
Fresh basil leaves and/or parsley
Salt & freshly ground black pepper
