INGREDIENTS :

4 slices seeded sourdough bread, toasted
200g ricotta cheese
1–2 ripe bananas, sliced
2 tbsp shelled pistachios, roughly chopped
2–3 tbsp honey
Optional: pinch of cinnamon or a few fresh mint leaves
